Popcorn Shrimp Jambalaya
Prep Time: 10 minutes Cook Time: 35 minutes
Makes: 4 to 6 Servings
1 (14-oz.) package andouille sausage, cut into 1/4-inchthick slices
1 (10-oz.) package frozen vegetable seasoning blend
1 (32-oz.) container low -sodium, fat-free chicken broth
1 (14.5-oz.) can fire-roasted diced tomatoes with garlic
2 cups uncooked long-grain rice
1 teaspoon Cajun seasoning
1 (20-oz.) package SeaPak Popcorn Shrimp
2 tablespoons thinly sliced green onions
Cook sausage in a large Dutch oven over medium-high heat, stirring frequently, 8 to 10 minutes or until browned. Remove sausage with a slotted spoon; drain on paper towels. Add vegetable seasoning blend to hot drippings in Dutch oven, and sauté 3 to 5 minutes or until thoroughly heated. Add broth, next 3 ingredients and sausage. Bring to a boil; cover, reduce heat to low, and cook 18 to 20 minutes or until rice is tender and liquid is absorbed.
Meanwhile, preheat oven to 450°. Bake Popcorn Shrimp according to package directions. Spoon jambalaya into individual bowls or a large serving bowl; top with Popcorn Shrimp. Top with green onions, and serve immediately.

6 tablespoons mayonnaise
1 tablespoon Dijon mustard
1 tablespoon honey
Pinch of salt
Cook popcorn fish according to package instructions. Stir mayonnaise, mustard, honey and salt together in a small bowl. Refrigerate sauce until popcorn fish are done. Serve Popcorn Fish with sauce and enjoy.

10 Casa Meatballs
4 (6 inch) whole-wheat tortillas
4 tablespoons whole cranberry sauce, divided
1 red apple, thinly sliced
Red cabbage, thinly sliced for garnish
In a microwave, heat meatballs with 1 tablespoon water on high for 1 1/2 -2 minutes, or until meatballs are hot. Place 5 meatballs down the center of each tortilla. Spread 2 tablespoons cranberry sauce alongside the meatballs. Place three apples slices down the center of each tortilla; garnish with thinly sliced red cabbage. Roll or wrap burrito-style.
Easy BBQ Meatballs
Prep Time: 6 minutes Cook Time: 3 hours Makes: 8 servings
2 lbs. frozen Casa Meatballs
1-20 oz. can of pineapple chunks, drained
2 bell peppers(red, green and/or yellow) cut into bite-size pieces
1-18 oz. bottle of traditional BBQ sauce
4 cups prepared rice
Place frozen meatballs, pineapple chunks and bell pepper pieces into slow cooker. Pour BBQ sauce over ingredients and stir gently to mix ingredients. Set slow cooker on high. Heat ingredients for 2 1/2-3 hours, stirring occasionally until hot. Serve over cooked rice for an easy meal.
