SeaPak Launches POPtoberfest Festival. Win a SeaPak Kitchen Prize Pack

SeaPak is launching a Poptoberfest Festival, a family program to be held during the month of October. During Poptoberfest, fans of SeaPak will be able to log on to SeaPak’s Facebook Page where there will be weekly trivia, polls, and fun questions that celebrate family time together and highlighting their awesome Popcorn Fish and Popcorn Shrimp. There will also be various prizes and special coupon offers given away each week! If you’ve never tasted these two SeaPak products, then you must NOW!!! I’ve been a fan of SeaPak since I first tried their seafood products a year ago (you should have seen the dance I did when it first appeared at my local Target). Below are two recipes, nothing major, just quick yummy tasting dishes anyone can make and of course will love.

POPCORN FISH CRUSTED BAKED MACARONI AND CHEESE


1 1/2 cups macaroni, cooked (boxed is perfectly fine to use)
2 cups white sauce (see separate recipe below)
2 tsp. grated onion
1/2 pound grated cheese
SeaPak Popcorn Fish (chopped small to use as breadcrumbs or larger as shown above)
Paprika
Preheat oven to 400°F. Cook and drain macaroni and place in a buttered 1 1/2 quart casserole. Blend onion and cheese with white sauce and pour over cooked macaroni.
Sprinkle top with chopped SeaPak Popcorn Fish and paprika. Bake uncovered in preheated oven for 30-35 minutes.


WHITE SAUCE:
1 tbsp. butter
1 tbsp. flour
1 cup whole milk
1/4 tsp. salt
Melt butter at 200-212°F in saucepan, microwave or double boiler.
Add flour to butter and whisk well to blend. Gradually stir in milk, whisking constantly until smooth. Allow to cook over medium-low heat until sauce simmers and thickens to desired consistency. Add salt, to taste. If you prefer a richer sauce, use 2 tbsp. flour and 2 tbsp. butter.


SHRIMP PO’BOYS

SeaPak Popcorn Shrimp
1/3 cup butter
1 teaspoon minced garlic
4 French bread rolls, split
Rémoulade Sauce
1 cup shredded lettuce


Melt butter; add garlic (optional). Spread cut sides of rolls evenly with butter mixture; place on a large baking sheet.
Bake at 450° for 8 minutes. Spread cut sides of rolls evenly with Remoulade Sauce. Place shrimp and lettuce on bottom halves of rolls; cover with roll tops.

Yum, that looks delicious! I'd have to swap out a few ingredients because I'm lactose intolerant and I have Coeliac disease but I definitely have to try this!
