In an industry often bound by tradition, Church and Alva adopted a hands-on approach from the whiskey’s inception to its release. Although passionate about whiskey, the Outsiders team recognized the need for experienced masters to disrupt conventional industry practices. They engaged the expertise of masters in the art and science of spirits, ultimately selecting Ari Sussman for their inaugural release. Sussman’s unconventional background, including working in Bordeaux vineyards and living among Bedouin tribes, mirrors the JYPSI Spirit, and he became the trailblazer for innovative whiskey-making processes.
“I was excited to work with these guys because it all centered on quality and creativity,” Sussman notes. “There were no rules or parameters. It just had to be the finest whiskey possible. Period.”
Whiskey JYPSI’s debut, Legacy Batch 001, recently clinched the prestigious Double Gold award at the San Francisco World Spirits Competition. This unconventional bourbon-based spirit breaks free from the norm. Instead of blending grains pre-fermentation or sticking to traditional sources, Whiskey JYPSI sources individual aged whiskey components from various origins, scientifically blending them to recreate the mash bill.
