Cascade Moon Edition No. 2: The Latest in Cascade Moon's Whisky Series

Cascade Moon Edition No. 2: The Latest in Cascade Moon’s Whisky Series

We all know the saying, “they just don’t make stuff like they used to”. For many, being able to enjoy the nostalgic products of a bygone era is becoming more and more valuable. In the midst of all our industry advances, artisanal, small-batch, and traditionally made products are highly sought-after. Last year, Cascade Hollow Distilling Co. launched a brand new range of highly limited whiskies as part of their Cascade Moon Whisky series. These limited-edition whiskies, which are described as being “mellow as midnight”, celebrate nostalgia. As of today, two whiskies in the series have now been released. Cascade Moon Edition No. 1 launched last fall and Cascade Moon Edition No. 2 followed soon after, in late December. The whiskies in this series are described as being “mellow as midnight”.  Today, we’re exploring the latter.

Cascade Moon Edition No. 2: The Latest in Cascade Moon's Whisky Series

First a brief introduction to their first launch. Cascade Moon Edition No. 1 has a bright and fruity nose, with notes of raspberries, pineapple, and coconut. A surprising savory grain character on the palate with a hint of brothy salinity, and a delicate finish.

Cascade Moon Edition No. 2 on the other hand, honors the heritage of the George A. Dickel & Co. brand, a distillery known for forward-thinking. This second release from Cascade Hollow Distilling Co. is a bold, mature liquid that celebrates 150 years of passion for crafting quality whisky. It continues to set the tone for the future of the whisky category while looking toward the next 150 years.

Cascade Moon Edition No. 2: The Latest in Cascade Moon's Whisky Series

Further tying back to George Dickel’s history, the liquid for this second release was taken from a small batch blend curated around the first barrel of TN Whisky filled after the distillery returned from the shutdown in 2003. This small-batch blend used less than 20 barrels, holding some of Cascade Hollow Distilling Co.’s best whiskies aged at least 17 years that are befitting a celebration of a 150-year heritage.

Even the release’s packaging pays homage to whisky-making over the last 150 years.  This unique, sandblasted ceramic bottle is sourced from one of the limited producers in the world. The labels are handprinted using a 130-year-old press, to create a stunning look and feel.

A 750ml of Cascade Moon Edition No. 2 will be sold regionally in Tennessee, California, and Texas for a limited time for the suggested price of $249.99.

Marble Distilling Co: Drink Sustainably with these Spirits with a Conscience

Marble Distilling Co: Drink Sustainably with these Spirits with a Conscience

It’s almost Inauguration Day and we’re in such a celebratory mood. In two days, we’ll have a new administration who promises to really be for the people. As we watch the virtual swearing-in ceremony, we’ll be raising a glass to President Joe Biden and Vice President Kamala Harris. Since we’ll be enjoying a new Administration with an actual conscience, we thought we’d celebrate with a spirits brand with a conscience too – Marble Distilling Co.

Marble Distilling Co: Drink Sustainably with these Spirits with a Conscience

Marble Distilling Co. is an award-winning grain-to-glass to ground distillery located in the Rocky Mountains of Colorado. Their “Drink Sustainably” philosophy is born from their passion to be gentle with the Earth’s natural resources and a duty to do their part to save the planet. Marble Distilling Co. returns all spent grains to the farms where they were grown, recycles 100% of their process water, and recapturing all of the energy from their stills. Marble has committed to being net-zero by 2022. They are at zero waste and use 1/100″ of the water a normal distillery utilizes. Their new addition of a 35kw solar array is getting them close to net-zero electricity. This makes them the most sustainable distillery on the planet!

Marble Distilling Co. produces two spirits brands, the small-batch Marble range consisting of Original Vodka, Moonlight Expresso Vodka, Moonlight Expresso Reserve, Gingercello, and Gingercello Reserve; the second brand, Hoover’s Revenge, features Hoover’s Revenge Whiskey, Hoover’s Revenge Ragged Mountain Rye Whiskey, and Hoover’s Revenge Single Barrel Bourbon. Their Original Marble Vodka is made from locally grown soft white wheat and malted barley, which imparts a smooth and creamy texture. The 80 proof, non-GMO vodka is 5X distilled in a copper pot still to ensure purity and clarity. It is then filtered over crushed Yule (limestone) Marble for a hint of minerality and finish; then the vodka is filtered on coconut husk for a luxurious, viscous finish.

We had the pleasure of getting better acquainted with some of Marble Distilling Co.’s offerings and we’re delighted with this multiple award-winning distilling company. We find ourselves completely obsessed with the Gingercello (a non-traditional take on the Italian classic).

Marble Distilling Co: Drink Sustainably with these Spirits with a Conscience

A contemporary cello adaptation, the gluten-free and non-GMO Gingercello liqueur is pot distilled with fresh ginger and rested on 200 hand-zested lemons and more ginger for several weeks. It combines fresh cut ginger and the sweetest part of the lemon zest creates a refreshing taste. Lightly sweetened, it is citrusy and bright with a ginger forward spiciness (the Gingercello Reserve is aged for a minimum of 1 yr in whiskey casks). the 70 proof liqueur is quite lovely on its own. We mostly enjoyed it on the rocks to fully enjoy what makes this such a distinct spirit, but the Gingercello is also extremely versatile as a modifier in craft cocktails. A Gingercello version of a Bourbon tea cocktail is absolutely divine (just switch out the limoncello for Marble’s Gingercello and you’re in cocktail heaven).

Moonlight Expresso Small-Batch Vodka

Coffee lovers will love the small-batch-from-scratch, coffee-flavored vodka. Made from a family recipe using all-natural ingredients, Moonlight EXpresso is made by distilling vodka, locally roasted Guatemalan coffee, and Ugandan vanilla beans. The result is a rich, dark coffee profile with a smokey, chocolate finish. Combined with a cold brew made in-house, this luxurious coffee liqueur is perfect for fabulous cocktail creations or stand-alone in hot or cold libations. The Moonlight EXpresso Reserve is aged in ex-rye whiskey casks for a minimum of 1 yr.

Marble Distilling Co: Drink Sustainably with these Spirits with a Conscience

The Hoover’s Revenge range is Marble Distilling Co.’s first foray into putting several single casks together, which yielded their Silver Label Whiskey. Each single 53-gallon American Oak cask is hand-selected and tasted for the flavor profiles it brings to this “marriage.” This whiskey is aged a minimum of two years, bottled at 84 proof with bottles numbered and signed by Connie Baker, Co-Founder and Head Distiller. The copper-colored whiskey is a marriage of three whiskies made by Marble Distilling Co: Bourbon, Rye, and Triticale. It features notes of hay, pear, and allspice; its taste is light in body with a floral sweetness with a hint of vanilla. It boasts a long finish with black peppercorn and clove spice that spikes at the end.

Marble's Distillery Doubles

One of our favorite things that Marble Distilling Co. offers during the pandemic is their Marble’s Distillery Doubles. A rotating selection of craft cocktails, such as their house Old Fashioned, Manhattan, Barrel-Aged Negroni, and more. Each Distillery Double makes two cocktails, all you have to do is just add ice. These cocktails are always made sustainably and with all-natural, local ingredients. Unfortunately, you have to live in Denver to enjoy their Distillery Doubles but you can still purchase their spirits online at www.shopmarblespirits.com with free shipping on 3 or more bottles.

CAMUS Caribbean Expedition Cognac: A Distinct Cognac Like No Other

CAMUS Caribbean Expedition Cognac: A Distinct Cognac Like No Other

While many spirits have seen some modern updates, vodka and rum come in many flavors, whiskies and bourbons come in new finishes, and wines are made with fruits other than grapes; one spirit that hasn’t much changed is Cognac. Until now! Until CAMUS Caribbean Expedition Cognac! Cognac is a brandy variety specifically made from wine that comes from Cognac, France. It is required to meet certain production methods and legal requirements and CAMUS Caribbean Expedition Cognac does meet all those requirements but it offers something a bit more. Something other cognacs do not offer, a double maturation in Oceanic and Tropical climates.

CAMUS Caribbean Expedition Cognac: A Distinct Cognac Like No Other

Camus Caribbean Expedition is a one-of-a-kind small batch Cognac. It is stunningly amber-colored with golden highlights. You will immediately pick up on its fruit and spicy aromas of banana, pear, cocoa bean, and nutmeg. Side note: We’re looking forward to a later edition of this cognac will be after extensive aging in the barrels. Upon the first sip, this cognac opens up with a noticeable kick but then rounds out to an elegant mouthfeel. Expect lots of aromas, soft tannins, and more exotic fruit with this divine spirit.

The journey to this unique cognac is an adventurous one. In its 4th year of aging, 10 sealed casks were loaded on the De Gallant ship, which then sailed the Transatlantic route to Barbados. For 45 days, the cognac in these barrels was exposed to multiple environmental factors, like motion and variation in temperature, humidity, and air pressure, enhancing its intensely aromatic notes. A nod to the 18th and 19th centuries when the Cognac trade around the world was made by ship? During those times, oak barrels left their cellars in France and reached their final destinations after months of sailing. Here’s a breakdown of the ways motion, Oceanic climate, and air pressure affected the liquid.

  • The continuous movement of the ship while sailing, amplifies the contact between each molecule of the liquid and the wood staves, accelerating the extraction of aromatic components from the barrel.
  • As the ship crossed different climatic areas, entering into very warm zones, some of the crucial processes of maturation, such as oxidation with the formation of aldehydes, had the chance to happen sooner.
  • Lastly, the continuous change in the atmospheric pressure increased the mechanic effect of contraction and expansion of the oak wood staves, accelerating the process of oxygen consumption. While most of the 10 casks were loaded in the hold of the ship, two of these (no.5 and no.8) were deliberately tied down on the bow, in the open air, to maximize the exposure to external atmospheric agents.

CAMUS Caribbean Expedition Cognac: A Distinct Cognac Like No Other

At the end of those 45 days, the Cognac was entrusted to the tropical conditions of Foursquare Master Distiller Richard Seale for 1 year of further maturation. The very unique climate of Barbados accelerated changes in color and flavor profile; this created a Cognac with a distinctive, highly aromatic taste that is an absolute first in the history of the category. The casks were kept in traditional Bajan cellars, stacked one on top of the other vertically. In the Bajan climate, the tannins from the barrels gave greater structure and complexity to the cognac compared to a cognac of equal maturation in a continental climate. The result is a cognac with higher aromatic components, more fruit and spice on the palate, and an array of flavors no European cognac possesses.

CAMUS Caribbean Expedition Cognac: A Distinct Cognac Like No Other

This unprecedented and special finish in the highly distinctive environmental conditions is the fruit of an experimental vision by CAMUS; the brand is looking at exploring the boundaries of Cognac-making to enhance the intensity of aromas. This limited edition cognac is a must to experience, especially if you’re a cognac connoisseur. Forewarning, only 4500 bottles of CAMUS Caribbean Expedition Cognac are currently available and it’s been obtainable since September 1st.
