We all know the saying, “they just don’t make stuff like they used to”. For many, being able to enjoy the nostalgic products of a bygone era is becoming more and more valuable. In the midst of all our industry advances, artisanal, small-batch, and traditionally made products are highly sought-after. Last year, Cascade Hollow Distilling Co. launched a brand new range of highly limited whiskies as part of their Cascade Moon Whisky series. These limited-edition whiskies, which are described as being “mellow as midnight”, celebrate nostalgia. As of today, two whiskies in the series have now been released. Cascade Moon Edition No. 1 launched last fall and Cascade Moon Edition No. 2 followed soon after, in late December. First a brief introduction to their first launch. Cascade Moon Edition No. 1 has a bright and fruity nose, with notes of raspberries, pineapple, and coconut. A surprising savory grain character on the palate with a hint of brothy salinity, and a delicate finish.

Cascade Moon Edition No. 2 on the other hand, honors the heritage of the George A. Dickel & Co. brand, a distillery known for forward-thinking. This second release from Cascade Hollow Distilling Co. is a bold, mature liquid that celebrates 150 years of passion for cra­fting quality whisky. It continues to set the tone for the future of the whisky category while looking toward the next 150 years.

Further tying back to George Dickel’s history, the liquid for this second release was taken from a small batch blend curated around the first barrel of TN Whisky filled a­fter the distillery returned from the shutdown in 2003. This small-batch blend used less than 20 barrels, holding some of Cascade Hollow Distilling Co.’s best whiskies aged at least 17 years that are befitting a celebration of a 150-year heritage.

Even the release’s packaging pays homage to whisky-making over the last 150 years.  This unique, sandblasted ceramic bottle is sourced from one of the limited producers in the world. The labels are handprinted using a 130-year-old press, to create a stunning look and feel.

A 750ml of Cascade Moon Edition No. 2 will be sold regionally in Tennessee, California, and Texas for a limited time for the suggested price of $249.99.

Until now! Until CAMUS Caribbean Expedition Cognac! Cognac is a brandy variety specifically made from wine that comes from Cognac, France. It is required to meet certain production methods and legal requirements and CAMUS Caribbean Expedition Cognac does meet all those requirements but it offers something a bit more. Something other cognacs do not offer, a double maturation in Oceanic and Tropical climates.

Camus Caribbean Expedition is a one-of-a-kind small batch Cognac. It is stunningly amber-colored with golden highlights. You will immediately pick up on its fruit and spicy aromas of banana, pear, cocoa bean, and nutmeg. Side note: We’re looking forward to a later edition of this cognac will be after extensive aging in the barrels. Upon the first sip, this cognac opens up with a noticeable kick but then rounds out to an elegant mouthfeel. Expect lots of aromas, soft tannins, and more exotic fruit with this divine spirit.

The journey to this unique cognac is an adventurous one. In its 4th year of aging, 10 sealed casks were loaded on the De Gallant ship, which then sailed the Transatlantic route to Barbados. For 45 days, the cognac in these barrels was exposed to multiple environmental factors, like motion and variation in temperature, humidity, and air pressure, enhancing its intensely aromatic notes. A nod to the 18th and 19th centuries when the Cognac trade around the world was made by ship? During those times, oak barrels left their cellars in France and reached their final destinations after months of sailing. Here’s a breakdown of the ways motion, Oceanic climate, and air pressure affected the liquid.

  • The continuous movement of the ship while sailing, amplifies the contact between each molecule of the liquid and the wood staves, accelerating the extraction of aromatic components from the barrel.
  • As the ship crossed different climatic areas, entering into very warm zones, some of the crucial processes of maturation, such as oxidation with the formation of aldehydes, had the chance to happen sooner.
  • Lastly, the continuous change in the atmospheric pressure increased the mechanic effect of contraction and expansion of the oak wood staves, accelerating the process of oxygen consumption. While most of the 10 casks were loaded in the hold of the ship, two of these (no.5 and no.8) were deliberately tied down on the bow, in the open air, to maximize the exposure to external atmospheric agents.

At the end of those 45 days, the Cognac was entrusted to the tropical conditions of Foursquare Master Distiller Richard Seale for 1 year of further maturation. The very unique climate of Barbados accelerated changes in color and flavor profile; this created a Cognac with a distinctive, highly aromatic taste that is an absolute first in the history of the category. The casks were kept in traditional Bajan cellars, stacked one on top of the other vertically. In the Bajan climate, the tannins from the barrels gave greater structure and complexity to the cognac compared to a cognac of equal maturation in a continental climate. The result is a cognac with higher aromatic components, more fruit and spice on the palate, and an array of flavors no European cognac possesses.

Crystal Head Vodka #MADEWITHPRIDE Cocktail

1 ½ oz. Crystal Head Vodka
½ oz. Aperol
1 ½ oz. Fresh Orange Juice
1 tsp Orange Marmalade
Top with Prosecco
Crusto-style sugar rim or orange zest for garnish.

Yellow: Golden Girl

1 ½ oz. Crystal Head Vodka
1 ½ oz. Pineapple Juice
¾ oz. Lemon Juice
1 Heaping bar spoon Powdered Sugar
Stir to froth and top with soda water, garnish with a pineapple slice

Green: Loud and PROUD

2 oz. Crystal Head Vodka
Fever-Tree Sicilian Lemonade
A handful of Fresh Cilantro
2-3 Slices Jalapeño
Muddle CHV, cilantro, and jalapeno in a shaker. Add ice and shake. Fine strain into a highball glass with new ice. Top with Fever-Tree Sicilian lemonade, stir and garnish with fresh cilantro.

Blue: Born this Way

1 ½ oz. Crystal Head Vodka
1 oz. Fresh Lemon Juice
Pinch of salt
1 bar spoon (tsp) Caster Sugar
¼ oz. Blue Curacao
½ oz. Tio Pepe Fino Sherry
1 Egg white
Add all ingredients into a cocktail shaker. Dry shake. Add ice to the shaker and shake again. Fine strain into a chilled glass and zest with lemon peel.

Purple: Free-Spirit

Crystal Head Free-Spirit Cocktail

2 oz. Crystal Head Vodka
¾ oz. Fresh Lemon Juice
¾ oz. Simple Syrup
1 ¼ oz. Butterfly Pea Flower tea
Combine CHV, lemon, and simple. Shake and strain. Pour butterfly pea flower on top

We’d never thought two of our favorite things together, especially since they are not normally paired together. When one thinks of bourbon, it’s usually pertaining to strong, classic cocktails. Bourbon isn’t normally mentioned in the same sentence with cheese and we know when it comes to cheese, wine is the pairing go-to. Thanks to Basil Hayden’s Bourbon and Beehive Cheese‘s collaboration, we had the great pleasure of experiencing the unconventional pairing of bourbon and cheese. We enjoyed a wonderful evening at the official unveiling of their latest partnership, the Basil Hayden’s X Beehive Cheese “Pour Me a Slice” Cheese. The result is a one-of-a-kind bourbon-infused cheese that’s sweet and creamy with a hint of bourbon spice.

As stated, Pour Me A Slice is sweet and creamy. It boasts three ingredients – Vegetarian rennet, cow’s milk, and Basil Hayden’s Kentucky Straight Bourbon. Our wonderful pairing started out with Basil Hayden’s Sweetest Sting cocktail paired with Beehive Cheese Promontory, a Beehive staple; this full-bodied, lively cheese offers snappy, citrus-like fruity notes to fans. It warms on your tongue and leaves subtle sharp notes in your mouth. The citrus notes of the cheese complemented the extra dry bourbon, white port, simple syrup, orange bitters, sage leaves, and orange peel ingredients of the delicious cocktail.

The next pairing was Basil Hayden’s Dark Rye paired with Barely Buzzed, an American original cheese that’s hand-rubbed with lavender buds and coffee to impart notes of butterscotch and caramel into the cheese; perfect with a full-flavored, sipping spirit like the Dark Rye. The beauty of this cheese is for some the coffee stood out while others picked up more of the lavender.

Last was the classic Basil Hayden’s Bourbon paired with the special-edition Basil Hayden’s X Beehive Cheese “Pour Me a Slice”. Made with Jersey cow’s milk, this semi-firm cheese infused with Basil Hayden’s Bourbon tastes sweet with a hint of spice.

We ended the spectacular evening celebrating Basil Hayden’s X Beehive Cheese “Pour Me a Slice” Cheese with a wealth of knowledge of cheese and how wonderful it is paired with bourbon. We got to go home with a set of small, personalized plates thanks once again to the artistic calligraphy talent of Nancy Moy; thanks to her, we went home with these wonderful hand-lettering decorated plates.
